Loving Pancakes
Pancakes have a long tradition in my family. I’ve adapted a classic recipe to make it flexible and functional for my house. You can add in extras like blueberries, ground flax seed or wheat germ for added nutritional power. This weekend I kept it simple, with a splash of brilliant pink to celebrate love and togetherness.
1 cup whole grain flour
1/2 teaspoon salt
2 teaspoons baking powder
1 tablespoon beet powder (optional)
1 cup milk (dairy, non dairy)
2 teaspoons vanilla
1 egg (or equivalent egg substitute, “just eggs”, ground flax seed in water, or mashed banana)
1 tablespoon oil (grapeseed, coconut, or other)
Mix the dry ingredients, then add the wet and stir until no lumps remain. I like to let the batter sit for an hour or so, or mix the night before and let sit in the fridge for an extra creamy texture. With a hot pan, cook each side and enjoy!
Not every day is right for pink pancakes, I was feeling extra lovey and creative so winged it with the beet powder which actually turned out brilliant fuschia. Toddler loved them as he does novelty in general. Feel free to leave out the beets or use another food based coloring to fit your favorite holiday.
